- • 4 large bell peppers
• 1 lb ground turkey
• 2 cups cauliflower rice
• 1 cup shredded cheese (cheddar or mozzarella)
• 1 onion, finely chopped
• 2 cloves garlic, minced
• 1 tsp smoked paprika
• 1 tsp cumin
• Salt and pepper, to taste
• 2 tbsp olive oil
Instructions
- 1. Preheat oven to 375°F (190°C).
2. Slice the tops off the bell peppers and remove the seeds.
3. Heat olive oil in a skillet over medium heat. Add onion and garlic, sauté until fragrant.
4. Add ground turkey, smoked paprika, cumin, salt, and pepper. Cook until the turkey is browned.
5. Stir in cauliflower rice, cooking until just tender.
6. Remove skillet from heat and mix in half of the shredded cheese.
7. Stuff peppers with the turkey mixture and place in a baking dish.
8. Top with remaining cheese and cover with foil.
